{sweet potato brushetta}

A wonderful, hot momma brought this delightful bruschetta to a brunch I was hosting. Three of the most yummy foods together...sweet potatoes, caramelized red onions, and blue cheese. I have made them for several occasions. These taste great even cold.

{sweet potato bruschetta}



1 sweet potato
1/2 of red onion, thinly sliced
Blue cheese
Olive oil
Cooking spray (optional)


Preheat oven 425.

Wash and pat dry sweet potato. Slice potato into 1/4 inch slices. Lay sweet potato slices out in a single layer on a baking sheet. Brush tops with olive oil or spray with cooking spray. Flip slices over and coat other side with oil. Bake slices in preheated oven for 8 minutes. Flip slices over and bake for an additional 5-8 minutes until tender. Set aside after baking.

In a skillet, warm a drizzle of olive oil over medium high heat. After heated, add red onion slices and cook until tender and caramelized.

Top each sweet potato slice with some red onion, sprinkle with blue cheese and serve!
