I actually made this salad for my birthday. Yes, I made my own birthday dinner. But I currently live almost in the middle of nowhere with very few eating choices, most all of them not healthy or worth the calories to eat at. So I wanted to eat what I most loved....salads and Tex-Mex food. And feel good about what I ate. So this how this salad was created!
The marinade for the chicken was awesome. And I impressed myself with my grilling skills on my cast iron grill pan. If you have one, you know what a pain they can be to clean up. So lined mine with foil, sprayed with cooking oil, and it made clean up a breeze. I'm sure my hubby appreciated that. He in fact did all the cleaning up. :) But the chicken recipe came from Farm Flavor. So thanks to them!
As I'm typing this up, I'm drooling. Now I want to make this salad again VERY SOON! The best of clean eating, I think!

{cilantro lime salad}
~ Cilantro lime grilled chicken & Cilantro lime vinaigrette ~
1/2 cup fresh lime juice
2 tsp salt
1/2 tsp pepper
1 tsp crushed red pepper
2 tsp garlic, minced
1/2 cup fresh cilantro, chopped
1/2 cup olive oil
3 lbs of chicken breast, skinless & boneless
Mix marinade ingredients in a large bowl. Put chicken in a large plastic zip lock bag or glass dish. Pour marinade over chicken. Seal or cover and let marinade at least 2 hours or overnight. Cook chicken on a grill or grill pan on medium-high heat until no longer pink in the middle. Let chicken rest for several minutes on a cutting board before slicing.
For Dressing:
1/4 cup fresh lime juice
1/4 cup olive oil
1 garlic clove, minced
Salt and pepper to taste
1 tbsp fresh cilantro, chopped
For Salad:
Spring mix
Black beans, drained and rinsed
Diced mango
Sliced red onion
Chopped red bell pepper
Diced avocado
To make salad, top spring mix with other salad ingredients, sliced grilled chicken and drizzle with vinaigrette.
