So I made hummus. BUT it was much different. And it got rave reviews from the ladies and several asking me for the recipe.
This recipe is adapted from one by Vegan Yum Yum.
Just an FYI, I used kale from a huge bag of it I had in the freezer. Just put it in my steaming basket like you would fresh kale. Bagged kale can still have some tough stem parts. So I tore those off before steaming it.

{kale & sundried tomato hummus}
1 can of chick peas, drained, liquid reserved
1 clove of garlic, smashed
1 Tbsp tahini paste
1/2 tsp kosher or sea salt
2 Tbsp of olive oil
1 bunch of kale, stems removed, chopped, steamed, and excess liquid squeezed out
1/4 cup of sundried tomatoes, about 4-5, chopped
Place chick peas, garlic, tahini paste, salt, olive oil, and 1/4 cup of reserved chick pea liquid in a blend or food processor. Blend for 30 seconds. Add additional reserved liquid if needed. Blend until creamy. Add kale and sundried tomatoes. Pulse until kale and sundried tomatoes are roughly chopped and well blended. Serve immediately or refrigerate until ready to serve. Tastes great with carrots, cauliflower, and pita bread or chips.
