{honey dijon salmon}

Honey Dijon Salmon...

This has to be one of the best ways to eat salmon.

It is so simple to make. And it tastes so delicious.

I adapted this recipe from one I made years ago that included butter and bread crumbs. I thought  "surely the butter and bread crumbs aren't necessary. Let's try it without them." And it worked great!

Simply cook up some veggies by roasting them or sauteing them to have on the side. And voila! A yummy, healthy dinner without a lot of fuss!

{honey dijon salmon}




2 salmon filets
1 tbsp Dijon mustard
1 tbsp honey
Chopped pecans
Fresh flat leaf parsley, chopped

Preheat the oven to 400 degrees.

In a small bowl, mix mustard and honey together.

Spray a baking dish with cooking spray. Lay salmon filets, skin side down, in the baking dish. Pour honey mustard sauce over filets. Sprinkle with chopped pecans and parley.

Bake for 15-20 minutes until the center of the filets is not longer opaque in the center.
